Add some colour in December’s kitchen
I love coleslaw, especially with all the festive leftovers and a bit of bubble and squeak and I like to make one with a bit of extra colour to show off on the Christmas table!
Use some red cabbage in the mix with some red pepper and red apple to add a bit of excitement to this otherwise boring looking dish.
Festive winter coleslaw
Serves 6-8 as a side dish
Takes about 10 minutes
1/2 small red cabbage
1/4 small white cabbage
1 small red onion, finely sliced
1 red pepper, finely slice
1 large carrot,peeled and grated
1 red eating apple
50g dried cranberries
for the dressing
4 tblspn low fat natural yoghurt
3 tblspn low fat mayonnaise
2 tblspns cranberry sauce
Peel off the outer leaves of the cabbages then use a really sharp knife to shred them as finely as possible. It helps to cut the cabbage into quarters first. Put in a very large bowl.
Add in the onion, pepper, carrot and dried cranberries and toss everything together.
In a small bowl, mix together the dressing ingredients until creamy and smooth.
Halve and core the apple then chop fairly finely leaving the peel on. Add to the cabbage
Spoon in the dressing and carefully coat all the salad. At first it looks as if there wont be enough but persevere!
Pile into a salad bowl then cover and pop in the fridge for an hour to let the flavours mingle.
This is best eaten on the same day – enjoy with your Boxing Day treats!
